“Please tell me about your eating habits. I am sure that I can guess what they are.” This saying by Brillat-Savarin, a French gourmet from the 19th century, is often quoted as it suggests a close connection between human and food.

All life needs to eat in order to survive. “Eating” is the first step of which human beings enter into civilization. One might say that cultural diversity has been created due to human beings trying to avoid starving. And as a result of having a diverse range of food, there is less of a need to worry about hunger. “The pleasure of eating” or “The pleasure of dining” gives impetus to cultural diversity. Various food cultures have taken hold in this modern society.

However, this situation concerning eating has greatly changed recently. In this lecture series, we are going to give ideas that will help to reconsider everyone’s image of “eating” through the lectures of both fields of science and literature.
